Paloma
The national drink of Mexico
THE SPIRIT BEHIND IT
Mexico’s favorite cocktail isn’t the Margarita. It’s the Paloma. The classic recipe is tequila and grapefruit soda, but ours elevates the drink by adding grapefruit juice, lime juice, agave nectar, and Socorro Tequila Blanco. The name Paloma means “dove,” and the drink didn’t really show up on menus until the late 1990s, though people in people in Guadalajara were drinking them decades earlier.
INGREDIENTS
- 2 oz Socorro Blanco
- 0.5 oz lime juice
- 0.5 oz agave
- 1 oz grapefruit juice
- Sparkling water
- Grapefruit slice and Tajín (garnish)
HOW TO MAKE IT
- Add tequila, lime juice, agave, and grapefruit juice to a glass with ice.
- Top with sparkling water and stir gently.
- Garnish with grapefruit and Tajín.
Taste it. Adjust. Make it yours.

Pablo’s Tip
Substitute grapefruit juice and sparkling water with any grapefruit soda (Jarritos or Squirt) for a more traditional Mexican twist.
