Tommy’s Margarita
Just three ingredients
THE SPIRIT BEHIND IT
The Margarita is one of the world’s most iconic cocktails, yet its origin remains unclear. The Tommy’s Margarita, however, has a definitive creator: In the late 1980s, Julio Bermejo at Tommy’s Mexican Restaurant in San Francisco swapped orange liqueur for agave nectar, putting tequila front and center. Bright, tart, and unmistakably agave-forward, the drink became the restaurant’s signature cocktail and is now a modern classic.
INGREDIENTS
- 2 oz Socorro Tequila Blanco or Reposado
- 1 oz lime juice
- 0.5 oz of agave nectar (use a “fat” 0.5 oz to ensure all the nectar makes it into the drink)
HOW TO MAKE IT
- Add all ingredients to a shaker with ice.
- Shake and strain over fresh ice in a rocks glass.
Taste it. Adjust. Make it yours.

Pablo’s Tip
Freshly-squeezed lime juice is the secret to a delicious Tommy’s Margarita.
