Every step, we’re there. Pablo Antinori, our Director of Agave Spirits, splits his time between our Dallas headquarters and our distillery in Jalisco, helping guide Socorro’s growth as an additive-free premium tequila.
Born in Argentina and partly raised in Bolivia, Pablo comes from a family of restaurateurs. “Flavor’s always been a part of my life,” he says. Early in his career, he apprenticed as a winemaker in Tuscany before entering the spirits industry, where he became a leading expert on traditional tequila and agave-forward spirits for one of the country’s largest drinks distribution companies.
Whether he is walking agave fields, tasting cooked piñas from the ovens, or evaluating finished blends with the production team, Pablo oversees every detail that affects what ends up in the glass. His obsessive focus on balance, texture, and flavor ensures that every bottle of Socorro feels like luxury tequila meant to be shared. Pablo tastes each batch before bottling, because what you put in the process shows up in the glass. “If it’s not right,” he says, “we don’t bottle it.”

Tequila Matchmaker’s Agavos Awards Competition
The Agavos Awards honor excellence in tequila. Launched in 2025 by the team behind Agave Matchmaker, the competition brings the same transparency to a dedicated awards program for agave-based spirits. Each entry is blind-tasted by experts with a deep understanding and appreciation of agave spirits who recognize expressions that stand out for flavor, quality, and craftsmanship.

San Francisco World Spirits Competition
First held in 2000, the San Francisco World Spirits Competition is the largest spirits competition in North America. Judges blind-taste over 5,000 entries each year, with each rigorously evaluated and scored. The judging panels are composed of industry professionals, including mixologists and bartenders, sommeliers, food and beverage managers, drinks writers, and spirits consultants.
